Crockpot Roast September 8, 2009

Here is another favorite at my house! I make this roast with the mashed potato casserole that is in my blog and my family loves it! (again, no pictures but this is on the list to make this week :) )

Crockpot Roast
3lb roast
salt and pepper
onion-sliced
1package brown gravy mix
1 cup water
1/4 c ketchup
1/4 c red cooking wine
2 tsp dijon mustard (I leave this out because my husband wont eat anything with mustard…but its better with it)
1 t. worcestire
1/3 t garlic

put all in crockpot and cook on low 8 hours…. I double liquid stuff to make more juice :)

 

Garlic Brown Sugar chicken July 30, 2009

I made this tonight and the family loved it! And I loved that it only took me 30 minutes to make dinner! I found this as I was sorting through my google reader from http://jdsegarr.blogspot.com/2009/07/garlic-brown-sugar-chicken.html#comment-form and I am so happy I starred it. This will for sure be going in my quick and easy dinner section of my recipes! brnsuggarlicchic

You will need:
4 cloves of garlic
4 tablespoons butter
1 pound boneless chicken tender cut breast meat
Salt (I prefer Sea Salt)
Fresh Ground Pepper
6 tablespoons packed brown sugar (I only used 4)

Begin by melt the butter in a frying pan. Add garlic and allow to slowly brown and then add chicken tenders to garlic and butter. Cook thoroughly, adding salt and pepper to taste. When chicken is fully cooked, add brown sugar on top of each tender. Allow brown sugar to melt into the chicken (about 5 minutes). I served this with fresh corn and mashed potatoes and it worked quite well together.

 

Mashed Potato Casserole April 9, 2009

This is from my great-grandmother… who I am lucky to have known as a small child. She was the most amazing cook with the most amazing recipes and this little black book that she recorded every meal she ever served company with notes on who at the meal liked and disliked each dish! It is soooo cool to go back and look at it and see how picky I was(and still am… hehe)!

What you need:

4-6 potatoes

milk

stick of butter

salt and pepper

1 Can Lesure peas

shredded cheddar cheese

1 can french fried onions

 

Peal and boil potatoes. Cut into chunks and boil until soft. Drain. Put potatoes in mixer with butter, salt and pepper and about 1/2 cup of milk. Mix until smooth and creamy… add more milk or butter to taste. Drain can of peas and add into mixer. Mix peas with potatoes. Take potatoes and put in a 9×13 pyrex. Sprinkle with cheddar cheese and top with french fried onions.  Bake for about 10-15 minutes in a 350 degree oven until cheese is melted and onions are browned and crispy.

Here is the casserole before baking…. (for a smaller crowd I reduce the potatoes and size of dish)

Meatballs January 18, 2009

Well, here is another recipe I got from my cooking board…. but I can’t remember who I got this from… so if this is your recipe please let me know so I can give you the credit!

I made these for New Years Eve and then again the other night for the family and they are truly amazing! I am not a huge fan of meatballs, but I love these!!!!

Honey and Garlic Meatballs:

1 package frozen meatballs(I used Turkey Meatballs)

3 Tbl soy sauce

1/2 cup honey

1/2 cup ketchup

4 tsp minced garlic (I used the jar stuff)

Mix all in a crock-pot and cook on low for about 2 hours… then switch to warm… stir occasionally to fully coat the meatballs.

You can serve these just as meatballs or use it for a dinner option and make meatball subs with some cheese on them!

 

Barbecue Muffins December 24, 2008

I got a new cookbook for my birthday that I am completely in love with! It is the Southern Living Busy Moms Weeknight Favorites….. and it is AMAZING!!!!! I made my first dish from it tonight, and it was a HUGE hit! And the best part is… it only took 30 minutes start to finish!!!

Barbecue Muffins:
1 (12oz can) refrigerated buttermilk biscuits (I used Grands)
1/2 lb. lean ground beef ( I used 93/7)
1/4 cup katchup
1 1/2 Tbsp brown sugar
1 1/2 tsp apple cider vinegar(oops I used TBSP)
1/4 tsp chili powder

1/2 cup shredded cheddar cheese

Directions:

1) Preheat oven to 375 degrees. Separate biscuits; pat or roll into 5 inch circles and spread into greased muffin tin.

2) Brown ground beef in a large skillet, stirring until it crumbles and is no longer pink. Drain and pat dry with a paper towel. Wipe skillet clean. Return beef to skillet; stir in ketchup and next 3 ingredients. Spoon into muffin cups.

3. Bake at 375 degrees for 15 minutes. Sprikle cheese on top and bake another 5 minutes. Cool in pan 5 minutes.

Dec/Jan WC Recipe Exchange! December 23, 2008

I was so excited to get to participate in this exchange! I am always looking for new ideas and this one fits my family perfectly! This was totally delish and I have already passed it on to my mom and sister!

Slow Cooker Root Beer BBQ Pulled Pork Sandwiches
2 lbs pork roast ( I used Pork Tenderloin)
1 12 oz can of your favorite root beer (we used Hansons) (I used A&W)
1 bottle BBQ sauce (we used Geno’s) (Iused Dr. Pepper BBQ sauce)

Put pork roast in slow cooker and add can of root beer. Cook on low for 5-7 hours. Shred pork and add in favorite BBQ sauce. Mix and serve on buns (we toast our buns).

This seriously is a new family favorite and my husband said it is the best thing I have made in the crockpot yet! (he is scared of crockpot cooking for some reason)
